My husbands family are either from Kuban in Russia or from Safat in Israel. They are Sephardic and many of their customs are different than what I see in the States.. what are some Sephardic customs for Tu Bishvat?

I am aware of a Tu B'Shvat seder from Istanbul (my family have used if for as long as anyone can remeber). It is a variation on the seder in the link provided by GY, that both Sephardim and Ashkenazim perform. It has Ladino prayers as well as the main body of the seder, and is very particular about the cups of wine (1 x White, 1 x lot of white, bit of red, 1 x equal white and red, 1 x lot of red, bit of white, and final all red). Also the fruits and foods are regionalised of course (big Ottoman influence there). But the difference seems to be minor, as opposed to the richness and beauty of celebrating Tu B'Shvat with true kavanah.

As Rabbi Bar-Sadoq has said there are different minhagim regardim the order of
eating of fruits for Tu bishvat.

I have been studying the texts of Peri Ess Hadar as printed in numerous
countries over the last 300 years and I have discovered this list of fruits to
be the most correct.

Group number 1 is all fruit.
The 10 items are:
Grapes or Raisins
Figs
Apples
Etrog(Citron)
Kumquat
Pear
Quince
Mulberry
Trilobed Sorbus
Carob

Group 2 outer fruit with a large center pit.
The 10 items are:
Olive
Date
Cherry (Must be sweet)
Jujube
Peach
Plum or Prune
Apricot
Sour Morello Cherry
Hawthorn Berry
Loquat

Group 3 outer peel and inner fruit
The 10 items are:
Pomegranate
Walnut
Almond
Chestnut
Hazelnut
Acorn
Coconut
Pinenuts
Pistachio
Another nut like Pecan,Brazil,Macadamia or Banana.

These are the 30 fruits.
Of course you can eat many others as well but you should strive for as many of
the above mentioned as possible. Wheat and Barley should also be eaten, usually
in the form of cakes, cookies, and Beer!
Also 4 cups of wine are drunk. White,Pink,Rose, and Red.

Is that Rabbi you mention the one of www.koshertorah.com ?
